Phase 2 is my least favorite phase. It’s a struggle to get through it, and I’m sick of egg whites. Tried the turkey bacon this week and I will not be eating egg whites any longer!!!!

Turkey bacon from breakfast and snacks is the way to go!

Have you tried making scrambled egg whites with veggies?

The roughest phase, I agree…. A nice change is soup…. I made Egg Flower/drop soup with chinese greens, tamari, beef, water chestnuts, broth, garlic, onion… saute the meat, add broth and the rest… then when it’s almost ready- EGG WHITES.. like an egg flower soup… THAT IS YUMMY! and a nice change.

Phase 2 Breakfast is also the Hardest for me. I love eggs but not egg whites. I find it a struggel. I use egg whites, mushrooms, red onions and spinach. It needs something else. Help!!!

I agree – I hit a new low today when I opened a can of white tuna, dumped it a bowl, ate half of it plain along with some baby carrots. Whoops – are carrots ok on Phase 2? :/

lalorenala – that soup does sound yummy! What kind of beef did you use?

I can’t find any turkey bacon without nitrates and without sugar. Which brand are you using?

Lizthelion I add onion peppers and some turkey bacon, Saute onion peppers and bacon first then put everything in a ramekin and bake 15-20 minutes at 350. I make them in advance and microwave in the morning. They are really good. The Bacon adds a lot of flavor.

Amber Trader Joes has some and so does applegate farms

    Steak Kabobs
    2 cups tomato juice
    ½ cup vinegar
    ¼ cup prepared mustard
    2 tsp xylia
    2 tsp salt
    ½ tsp pepper
1 ½ lbs beef sirloin steak, cut into 1 ½ inch cubes
    1 lb mushrooms
1 lg green pepper, cut into 1 inch pieces
1 lg onion, cut into 1 inch pieces

Mix tomato juice, vinegar and seasonings. Place meat in shallow glass dish; pour tomato juice mixture over meat. Cover; refrigerate 2 hours. Remove meat from marinade; reserve marinade. Put remaining marinade in small sauce pan and bring to a boil for 3 minutes.
On one set of skewers put meat. On another the veggies. Place on grill 4 inches from hot coals. Cook 12 – 15 minutes, turning and basting frequently with reserved marinade.

The tomato juice is just used as a marinade, there is a lot leftover after marinating the meat.

I found a turkey sausage recipe that I’m going to try tomorrow for a phase 2 breakfast.

    2 lbs ground turkey
    1 Tbsp Stevia or Xylitol
    11/2 tsp ground black pepper
    1 1/2 tsp ground sage
    1 1/2 tsp ground thyme
    1/2 tsp dried marjoram
    1/2 tsp red pepper flakes

Mix well, shape and fry over medium high until golden and no longer pink in the center. About 6 to 8 minutes.
I’m so tired of egg white scrambles. This will be a nice change. :)
