I’m posting my mom’s true and tried recipe for mayonnaise that she’s been using for years. Instead of using regular oil, I now make it with olive oil for phase 3 and it tastes great.
The olive oil though makes it a bit less firm than the typical mayonnaise. Feel free to substitute with other oils and let us know the results!
2 Tbsp vinegar
1/2 tsp salt
1 tsp xylitol
1 cup oil
Blend all the ingredients except for oil with a blender.
The trick is to “drop” in the oil slowly as the hand blender or regular blender is still on, and not “pour” in the oil. You can use a spoon for that.
At times it happens that for no good reason the recipe flops. Don’t fret. Just make it again, and then slowly add your failed batch to the new one.
